HOT AND SOUR PRAWN SOUP ( Tom Yum Koong ) ต้มยำกุ้ง

Flavor : hot - sour
Serve : 1 - 2 persons
Duration : 15 minutes
Tips : For more flavor, boil prawn heads to make prawn stock.

Ingredients
1 bowl water
1 stalk lemongrass – smashed and chopped in half 1 slices galangal – thin sliced
2 kaffir lime leave – torn quarter
2-3 small chilies - smashed
Tomato - bite size
1-2 mushroom – bite size
Onion – bite size
Chopped coriander and spring onion for garnish
2-3 prawns

Seasoning
1 tsp sugar
2 tsp fish sauce
1 tbsp lime juice
1 tsp. chilli jam

Preparation
1. Heat the water in a pot over high heat just until boiling. Then add lemongrass, galangal, kaffir lime leave and chilies. Cook for 2-3 minutes.
2. Add tomato, onion and mushroom. Cook for 30 second.
3. Low heat, add sugar, fish sauce, lime juice and chilli paste. Then add prawns and leave until
the prawns cookใ
4. Add coriander and spring onion well before serving.
