MASSAMAN CURRY PASTE ( Prik Gang Massaman ) พริกแกงมัสมั่น

Ingredients
4 dried large red chili – soaked and chopped
2 roasted cardamom pods – shell removed
1 tsp coriander seed – roasted
1 tsp cinnamon – roasted
1 tbsp roasted shallot
1 tbsp roasted garlic
1 tbsp roasted lemongrass
1 tsp roasted galangal
1 tsp turmeric
1 tsp tamarind
1 tbsp peanut
20 g kaffir lime skin
20 g Thai jingseng (finger roots)
1 tsp cumin
2 star anis
50 g garlic

Preparation
1. Put all dried spices in a mortar and grind them until they turn into a powder form.
2. Add chili and pound until it gets small.
3. Add the remaining ingredients and pound until the texture is smooth.
